I love deviled eggs at every holiday meal. They are simple to make or will last in the refrigerator for 3 days. What a relief, something you can cook ahead of any meal.
Recipe from Kristin Cavallari’s cookbook True Comfort
You will need
12 eggs
6 tb vegan mayo
1 tsp yellow mustard
4 tsp Sriracha
Pink Himalayan salt
Fresh ground pepper
How to make
Bring a large pot of water and boil eggs for 13 minutes. Remove and run the eggs under cold water to cool them.
Cut the eggs in half lengthwise and scoop the yolks into a medium bowl.
Set the sites aside
Add the mayo, mustard, Sriracha, and a big pinch of salt and a pinch of pepper to the yokes
Mix well
Spoon the yoke mixture into each cavity in the whites
Serve right away or the eggs will last 3 days in the fridge covered up
Makes 12 eggs
Enjoy this dish any time of year.
