Gluten-Free Melting Chocolate Souffle

A Flourless Chocolate Cake

Ingredients:

6 tablespoons unsalted butter

4 oz. semisweet chocolate

1/2 cup sugar

1 1/2 tablespoons cornstarch

2 eggs plus 2 egg yolks

In a saucepan over low heat, melt butter and chocolate together. Set aside. In a mixing bowl, combine the sugar and cornstarch. In a separate blow, whisk the eggs and yolks together. Add the melted butter and chocolate mixture to the sugar mixture and combine thoroughly with a wire whisk. Stir in eggs and whisk until just smooth. Place in refrigerator overnight.

Preheat oven to 400 degrees. Divide the mixture evenly into four buttered and sugared baking cups or ramekins (approximately 2 inches in diameter and 3 inches tall). Scoop the mixture into the molds so they are two-thirds full.

Place cups or ramekins on a cookie sheet and bake on the top oven rack for 20 minutes. Using oven mitts or potholders, remove from oven and turn upside down. to release the soufflés to individual plates. Add a scoop of vanilla ice cream and sprinkle with powdered sugar.

I was gifted a copy of Down But Not Out by Mat Desforges from Soraya Nair at Cherish Editions for an honest review. Thank you Soraya.

About the Author

“Mat Desforges is a dad, husband, brother, son, friend, acquaintance. Just like many of us are or will be.
Mat grew up in Dorset and was educated there as well as in Devon and France before moving to London and Guernsey after university. He then travelled and worked abroad before settling back in Guernsey for many years with his wife and now his two sons.

He has worked in a variety of roles in the commercial sector, government and regulation.
At the time of publishing, he is travelling with his family on what the kids have called a “global family adventure.” This pause from normal family life was partly inspired by the experiences he recounts in Down… but NOT Out, his first book. While away he is working on a second book.”

My Thoughts

Excerpt From: Mat Desforges. “Down… But NOT Out.” Apple Books.

“My impatience and inability to relax and take stock (again, all things that I feel had contributed to my negative feelings) were, yet again, getting the better of me. And I had more time to do these things now!! My days were busy, I was shattered, and I wasn’t improving. I was very up and down.

This came to a head when I was looking at my lists and felt my stress and negativity rushing back. But I have to do all these things to get better, was all I thought. I then shared these feelings and lists with a couple of people and they looked at me with that knowing eye.
“Just stop,” was what their facial expression was saying, but I couldn’t see it. They had to spell it out. They told me to stop and to take a rest. A proper rest. This was going to take a while to resolve.”

After Mat had his mental health break in the electronics store he thought a short bit of treatment and a list of all the things he needed to accomplish would get him better only to find it was digging him a bigger hole. Luckily he had friends to share his feelings with and they helped him see where he was going off course. Mat is mission-oriented and that can get the better of him, healing and getting back on your feet is a process that Mat had to learn. 

His view is a realist one, is very raw in his writing and shares straight from the heart. I like his no holes barred approach. I think anyone who has been challenged with depression can relate and understand where Mat is coming from. 

Down But Not Out is a fast read and will keep you turning the pages. I also think this book would be helpful to anyone who has had depression even if it’s not clinical or long-term.

Review Of To Better Days Joint and Muscle Patches

I was kindly gifted a Trial Pack of Joint and Muscle Patches for an honest review by Marta at To Better Days. 

The Trial Pack includes 6 small and 3 big patches, both have the same amount of ingredients. I focused on my neck and shoulder since I’m working out a kink due to a new pillow. 

 

 

I love the portability of the pack! You can stick them in your handbag, desk, backpack, pretty much anywhere a few pieces of paper will go. They have the greatest adhesive delivery system, they are thin but not delicate, almost transparent, and stay put.

The smaller ones are longer than bandages and get in all the small places you feel pain. The larger ones are a full sheet size and perfect for large areas like the shoulder. I used one on my shoulder across the top. Even though it didn’t adhere perfectly because our skin moves in that grove on the shoulder, it stayed in place for over 12 hours. 

After a short period of time, I felt some relief in the kink in my neck, it wasn’t as stiff, allowing me to move more freely. It was so comfortable I slept with it on and was not distracted by it being there. These are good for your everyday aches and pains. 

The patches are Gluten, Lactose, and Latex-free and suitable for vegetarians. 

I would highly recommend the patches and they have a wide selection of other patches on their site.

How To Speak Your Doctor’s Language

I hear people often say their General Practitioner doesn’t listen or they don’t have enough time during their scheduled appointment. I’ve been there so many times and have come up with a system that works for me. You can adapt to what works with the doctor and your style of communication. 

Knowing exactly how much time is scheduled for the appointment is the first step. My previous doctor scheduled 15 minutes, was always late and rushed off to the next appointment. After several months of total frustration, he had the office check to see if my insurance would allow a double appointment time, which they did. Now instead of 10 minutes at best I can 20 minutes. This made a huge difference. 

You have to set realistic expectations on what can be discussed in your allowed time slot. If you have 15 minutes you can expect 10 minutes in most cases. In ten minutes you can’t discuss 45 minutes worth of topics. Go in with an agenda of two items you want to discuss and have each item laid out on paper with any side effects or symptoms your having and any related questions. When your doctor comes in the room don’t sit and chit chat, go straight for I know you’re busy so here’s what I want to accomplish today. 

This will give your doctor time to ask more detailed questions and dig a little deeper each visit. It will also give you time to discuss any side effects you should be concerned about if a new medication is prescribed. Don’t walk out of there without asking what side effects you should be concerned about, I don’t care if you can look it up on the Internet. It’s the doctor’s responsibility to assess your specific health conditions and the medication. You don’t need all the details, just get the basics, WHEN to go to the hospital or call them. 

If you were not able to discuss all your issue and concerns then don’t leave without another appointment to get them covered. Working with your doctor is a process and one that will take time and each one is different. Remember your doctor is a generalist, not a specialist. If you feel your issues aren’t being heard after repeated attempts then ask for a referral. 

After 15 years I changed doctors, we just weren’t communicating anymore. It’s the best thing I could have done. I love my new doctor and her style, she’s very proactive and hands the baton off to a specialist much quicker than my old doctor. 

My current doctor schedules 30 minutes appointments, is rarely late and we cover three topics. I usually get the full 30 minutes if not a few more. She looks at my chart online while we’re talking if she needs to check medications, we discuss appointments with other doctors and we discuss my three topics or concerns. Because she is so close to the house and I get such focused attention I don’t have to see her as often or when I’m having a hard time, it’s very easy to see her more often. 

My doctor worked in an Internal Medicine office before so she is very familiar with Lyme Disease and Fibromyalgia. In just a few short years I’ve seen her, she has sent me to the appropriate specialist early on versus my old doctor who was slow to give a referral. She sends me a referral as soon as she’s out of her specialty. 

By doing so, she has helped discover several critical health issues that needed immediate attention without delay in trying to treat herself. This is one area I feel my previous doctor failed me in after seeing how my new doctor does business. 

She always looks up the side effects and checks to see if there are interactions with my other medications. She discusses side effects and even knows when my insurance company needs a preapproval on a medication. That way I can be mindful that if it takes a little longer to fill the prescription. 

I look at my doctor’s appointment like I did when calling on high-level executives during my sales career. They are pressed for time, have too much on their plate, usually have big egos and type-A personalities. When you meet with a C-level executive, you go in shake their hand, and tell them why you are there is a few brief sentences then you shut up.

I go to my doctor’s appointments with the same type of mentality. Know how much time I have, state what I need, and give my doctor time to their job. They can’t do that if I don’t stop talking and asking questions. 

Set the right expectation and if you are unsure then ask your doctor honestly how to get the best out of your time with them. 

Go in with facts, a list of symptoms but don’t tell them what is wrong with you unless you are with your specialist or you are talking specific illness-related questions.

Things That Will Make You Feel Good About Your Life

It is also essential to keep up with your preventative care, which means going for regular visits and screenings that allow you to stay on top of any issues or concerns before they become big problems.

Continually Chasing All Your Dreams 

Chasing your dreams is a great way to start a better life, and it doesn’t have to be about things that are very far out of reach. It’s the little dreams too! 

Don’t just think you’ll get rich one day or something – go after what makes you happy in your everyday life. Whether taking up a new hobby or traveling the world with your best friend, chasing those dreams will give you so much happiness when they come true.

Getting That Promotion at Work 

Getting a promotion at work can be very fulfilling and rewarding. It can help you feel more confident in your work life, and it might be an indicator that you are doing something right at the company where you work.

It is essential to understand what makes a promotion rewarding for each person because not everyone values money or title as much as others do when receiving this kind of reward from their employer. In addition, the most fulfilling promotions give people opportunities to learn new skills or introduce them to exciting workplace challenges.

Attaining Financial Independence

Attaining financial independence is a big deal. It can be a great feeling to know that you no longer need to rely on anyone else financially, and it is something worth celebrating.

As per Forbes, there are many benefits of financial independence such as having the security of knowing your money will last for at least 30 years in retirement and you will spend less time working. This means more family time and living life on your terms!

Reconnecting with an Old Friend 

Reconnecting with old friends is another way of feeling good about your life. You can catch up on what you have been doing since the last time you saw each other and also reminisce over old memories when you were both “babies.”

In conclusion, many things will make you feel good about your life. It would help if you got your health checked, continually chase all of your dreams, attain financial independence and reconnect with an old friend, as these four things will give you a lot more energy to do the other tasks in life.

Chronic depression is a mental illness that millions of people experience to some degree each year. All types of things can trigger depression in anyone, such as trauma, grief, getting laid off, and money worries. The chances are high that you know someone with depression.

Certain Times of the Year

Seasonal Affective Disorder, or SAD for short, is a mood disorder that can cause some people to experience symptoms of depression but only at certain times of the year. Most people with SAD experience symptoms during the winter months.

However, SAD can also strike in the summer. In those cases, the reason is that the body finds it difficult to adjust to new seasons.

Quitting Smoking

If a person used to be a heavy smoker and decided to quit the habit, they will likely experience symptoms of depression. Smoking can obviously be addictive, and when a person gives up such a long-term habit, they start to get withdrawal symptoms.

Nicotine, one of the common elements in cigarettes, creates high levels of the neurotransmitters dopamine and serotonin. When a person gives up smoking, they have significantly lower levels, resulting in feelings of depression.

Have you ever noticed that people with chronic (i.e., continuous) physical pain often seem unhappy? They might take medication to ease the pain, yet they still appear sad. That’s because chronic pain can also cause depression symptoms.

Poor Quality of Sleep

It’s no secret that people who regularly have a poor quality of sleep end up feeling irritable and generally not very pleasant to be around. However, some of those individuals could have a high risk of developing chronic depression.

If you experience a poor quality of sleep, you should take immediate steps to diagnose and resolve the reasons why that’s the case. For example, the issue might be down to an unsuitable bed or pillow, or your sleeping partner’s snoring could disturb your sleep.

Internet Addiction

Most people spend at least one or two hours each day surfing the Web and catching up on their social media feeds. If you spend significantly more time online each and every day, your Internet addiction could result in you developing depression.

It’s a well-known fact that people who live in abusive home environments are highly likely to develop depression. But, what you might not know is that something as simple as the area where you live can trigger depression symptoms.

That’s because people who live in densely populated areas typically have higher levels of stress, and that can trigger feelings of depression in those individuals.

Dietary Changes That Can Help Reduce Inflammation and Ease Chronic Pain

The benefits of changing your diet when living with chronic pain have long been debated. But while a diet full of processed and high sugar foods isn’t great for everyone in general, is there actually any truth in a diet curing chronic pain?

While changing your diet can eradicate your pain levels and cure you, there is some truth in looking at what you eat and how you can greatly impact your pain levels. However, because everyone experiences pain differently and lives different lifestyles, there is no one-size-fits-all when it comes to using diet to manage health conditions and pain. All you can do is an experiment and see what works for you if anything does at all. That being said, there have been numerous studies into an anti-inflammatory diet improving symptoms and pain levels in fibromyalgia patients, meaning they can improve their quality of life by making some easy dietary changes.

Take It Slowly

The main thing to remember when making any dietary changes is that it can take time and patience to find what works for you. For example, cutting out many food groups won’t alert you of anything specific instead, it will further restrict your diet.

So try removing one food group at a time and see if it makes any difference before trying something else.

Best Foods For Inflammation

If you want to try some foods linked to good health, you can find some recommended foods for people with chronic pain. But doing your research into what works for you, especially if you lead an active lifestyle, can give you a better understanding of the nutrients you need to support your body the way it needs it.

Peas and other plant foods that include a pod, including beans and garbanzos (also known as chickpeas), white beans (also known as navy or cannellini beans), and hummus are examples of great foods for people with chronic pain.

Nuts and seeds are further examples of foods that fall into this category. Nuts include walnuts, almonds, pecans, and peanuts, along with sunflower seeds, pumpkin seeds, pine nuts. Peas and soybeans are a type of plant known as a “legume,” which is produced in a pod. Sugar snap peas, ordinary peas, roasted soy nuts, edamame, and any form of tofu are all acceptable options.

Berries, pomegranates, and cherries are examples of dark-colored fruits, which are beneficial in the prevention of inflammation. Drinking fruit juice should be avoided, or a small glass should be consumed and mixed with equal water. Fruit juice contains a high concentration of sugar, which exacerbates inflammation.

Yellow, orange, and red peppers, as well as tomatoes, are examples of vegetables. Arugula (rocket or roquette) and a variety of mixed greens, particularly dark leafy greens, such as spinach, chard, and kale, as well as leaf lettuce and romaine lettuce. Purple and green cabbage, onions, garlic, broccoli, Brussels sprouts, and cauliflower are among the vegetables you should try along with radishes, cucumbers, green beans, and green onions too. 

When it comes to changing your diet to reduce inflammation, you need to experiment with what world for you and allow your body time to adjust to the changes and rid itself of any irritants to fully benefit from the changes.

Want To Make Your Home More Energy-Efficient?

Energy efficiency is a bit of a buzzword of late, right? But what does it really mean for us and for our homes? When you are more energy-efficient you can save yourself a lot of money, which makes sense for anyone. So if you are wondering what you can do to be more energy-efficient, then here are some things to think about and what an energy-efficient home actually means.

Wall and loft insulation

Heat rises, as the science goes, so if you have heat in your home, where do you think it is going to leave from? It is going to leave from the walls and the ceiling, which is why having loft insulation can really make a difference to how energy-efficient the home is. If your home loses heat quickly, then you will keep spending more and more money on your heating bill to keep the home at a temperature that you like. So check your wall and loft insulation and see if there needs to be an update.

Consider solar panels

Natural and renewable sources of energy are the way forward, but can they be used in the home? The answer is quite simple, yes! One of the most commonly used is solar panels on the roof of people’s homes. This often means a massive cut in electricity bills, even being able to sell some of the power back to the grid. If you’re not too sure about the upfront costs of getting solar panels, then looking at a site like ChooseSolar could be a good idea. The idea there is that homes are connected to solar farms in the local community and can use the power of those solar panels, rather than needing their own.

Windows

Much like loft spaces and walls, heating can also be lost through your windows. If there are even the smallest of gaps, they can let in a lot of air and if it is cold, can mean that you have to keep your heating on for longer, as it will not keep the warm air in the home. If you have single-glazed windows, which can be present in a lot of older homes, then they need to be replaced. This can have quite large upfront costs, but you will quickly see the benefit when it comes to the energy efficiency of the home, not to mention the noise reduction that you will experience when inside the home too.

Switch your energy provider

If you want to pay less on your energy bills, then think about how long you have been with your current energy provider. Are you on an acceptable tariff with them and do they offer the use of renewable energy? When you move to a different provider that does offer such terms, then you can save money and know that you are using better sources of energy that are natural and renewable.

Looking After a Pet’s Mental Health: Is It So Simple?

Pets keep loneliness at bay for millions of people and can help with our overwhelming thoughts and while we are more than aware of how a pet can help us with our well-being, we must remember to return the favour. Supporting your pet’s mental health is essential. The pandemic has made us a lot more anxious, but what about our pets? Our pets’ behaviour might change intense situations. But what can we do to make sure that, if we notice our pets having any signs of poor well-being, that we support them?

Stimulating Their Senses

Providing mental stimulation is crucial. If you are currently stuck at home, you can hide treats and toys around the space to provide that all-important exercise and mental stimulation. But when life returns to normality, give them the benefits of a variety of scenery. Taking them to explore new scenery is as important to your pet’s mental health as it is to you. 

Exercising With Different Techniques 

Ensuring that they remain agile is essential. Building up their agility will teach them something new and stimulate them. If your pet needs to stay indoors, you must remember that their exercise should not suffer. You can also incorporate new toys on a heavy rotation. A variety of interactive toys can keep your pet interested and stimulated. There is a lot to consider. And when you start to stimulate their senses, you give them that all-important distraction. 

Access to Light

Fresh air is important, as well as light and exposure to a variety of senses. Giving them exposure to different smells and sounds provides simulation. You have to remember at this point if your pet’s behaviour changes or they get frustrated, you may need to change your approach. If you are not taking your dog out much at the moment, you need to remember that the variety of noises and smells may frustrate them at not being able to go outside. 

Observing and Acting

A physically and mentally stimulated pet will be happier and healthier. Observing changes in their behaviour gives you the opportunity to spot if their mental well-being is being impacted. You should always contact a vet if you are concerned, but the solution might be closer to home. You could give them more treats if you feel you’ve been cutting back recently. There are also other ways to stimulate them, such as the soothing sounds on My Dog’s Favourite Podcast available on Spotify. It is an audio treat for your dog that could help to calm their anxieties. 

Stimulation is crucial, but we have to remember when we are trying to look after our pets and mental health that we are more observant. They could be taking their cue from us, in which case, it’s essential to focus on creating a healthier environment for everyone. We can look after our pet’s mental health. In many ways, it is simple.

I love to save money on items I’m already purchasing and there are two Apps that you add to your browser that will help you save money if there is a coupon code available or promotion going on.

Ratuken

I can’t tell you how much I love Ratuken! They have paid me so much money for shopping it’s hard to believe. To date, I’ve earned around $1850 just for shopping and buying what I already planned to buy. They payout once a quarter and next month a check will mail out for over $250, my credit card is going to love that payment. 

Companies love Ratuken too. One of the companies I shop at often has 10%-15% Ratuken promotions versus the normal 1%. So I try to plan my shopping around the higher cashback days. October Chronic Illness Writing Prompts

This month’s Chronic Illness Writing Prompts are Falling, Transitioning, Choosing, Imagining, and Beautifying. This month I picked three of the five. Each month the prompts are from A Chronic Voice, be sure to check out her awesome blog filled with tons of information on living life to the fullest.

 

This month I’m working on the inside and the outside of me. On the inside I’ve started Yoga, at least I have bought the necessary items to start. I plan to focus on stretches then work into some actual Yoga moves. It’s been years since I’ve done any exercise other than walking the stairs. Today I started walking with my husband and the dogs at lunch. 

As for the outside, after getting my hair cut my ears are more noticeable so I pierced one of my upper ears and have bought a diamond shooting star for it. I pierced both sides but the side I sleep on hurt too bad and I let it close up. I have plenty of jewelry but haven’t worn it much this past 10 years. I started wearing a necklace again and that has worked so far. I also bought a faux diamond wedding ring since mine no longer fit. Now I have a wedding ring to wear after years of going without one, it feels good and I think my husband likes it. 

I have spent many years living as a patient, always reading about what is going on with me, the latest research, and even listening to others with the same health issues. I’m choosing to no longer take that approach. When I go to the doctor, I’m a patient, ask my questions, come home, and read about the side effects of any new meds, and then I’m putting it away. Yes, I have to pay attention to the everyday issue and look for side effects or worse but I’m changing my mindset. I’m working on a healthy mindset with a sick body. It’s not glossing over the facts, I chose to not focus on the facts. There is a big difference. My doctor is great and she changed my meds yesterday, I’m taking a positive attitude about how they will help my pain levels without opioids.  I’m living opioid-free for as long as I can. 

 

 

I’m having fun with my blog by doing more Book Reviews and Interviews. I have had so many great books to read and enjoy the opportunity to share with my readers. I have two companies out of the UK that I’ve been working with and now work with NetGalley so I can expand my range of self-help and mental health books.   

I wanted to be a journalist from the sixth grade on, actually worked on the school and our local newspaper in high school. I won a Journalism scholarship but we couldn’t afford for me to go to school out of town. I look at blogging as my writing opportunity. I’ve forgotten most of what I learned about proper writing but I get along. I want to expand myself. We are well-rounded people with many interests and I want to bring you more interesting topics on my blog.  

I also want to get back to more advocacy work, I’ve been lax and now it is the time to get involved in issues that mean something to me. You may have noticed how active I’ve been in October Awareness Days, they are great issues that need more conversation around them. Look for more in the coming months.
